8 oz rice noodles, dried
16 oz chicken thigh, cubed
¼ cup thai basil leaves
2 tbsp garlic, minced
1-2 chilies, seeded and diced (based on how spicy you want the dish)
2 tbsp vegetable oil
2 tbsp oyster or fish sauce
3 tbsp soy sauce
2 tsp brown sugar
2 tbsp water
Pour boiling water over noodles in a large bowl and set aside for 5 minutes. Drain.
Mix oyster or fish sauce, soy sauce brown sugar and water in bowl, set aside.
Heat oil in pan over high heat. Add garlic and chilies and cook for 10 seconds. Add chicken and sauté until chicken is cooked through. Add 1 tbsp of the sauce and 1 egg. Fry for 30 seconds. Add noodles and rest of sauce. Cook for 1 minute.
Remove from heat and add basil leaves, stir until just wilted, then serve immediately. Serves 4.
