Spinach Rice

Spinach Rice is a great healthy side dish sure to complement many a main meal.Ingredients

2 tbsp olive oil
½ cup chopped onion
1 cup water
1 tbsp dried parsley flakes
¼ to ½ teaspoon salt
1/8 tsp pepper
½ cup uncooked instant rice
2 cups fresh baby spinach


In a saucepan, heat oil over medium-high heat; sauté onion until tender.

In your rice cooker stir in water, sautéed onion, parsley, salt and pepper, uncooked rice and spinach.
Cook on regular setting. When complete, stir to combine. Serves 2.
