3 medium sweet potatoes, peeled and chopped into cubes
½ cup rolled oats
1/3 cup almond or coconut flour
½ cup cocoa powder
½ cup light brown sugar
Steam or boil sweet potatoes until they can be easily pierced with a fork, around half an hour. Preheat oven for 355ºF. Blend oats and flour in food processor.
Add rest of ingredients and blend again. Pour batter into baking dish and bake for 30 minutes. Sprinkle additional cocoa powder on top. Let cool and cut into squares to serve. Serves 8.
