Shrimp Berry Nut Salad


2 cups mixed greens
½ cup strawberries, sliced
½ cup blackberries
½ medium cucumber, chopped
½ cup chopped carrots
1 oz. feta
4 oz. pre-cooked shrimp
¼ avocado, thinly sliced
¼ cup chopped walnuts
1 tsp. olive oil
2 tsp. vinegar of choice (red wine or balsamic recommended)
Salt and pepper to taste
Juice from ½ of lemon


Mix olive oil, vinegar, salt, pepper and lemon in small bowl. Whisk together. Combine remaining ingredients on a large bowl and toss with dressing. Serve immediately. Serves 1.
