Salmon Tacos with Cabbage Slaw

Thai Drunken Noodles is a perfect way to enjoy a tasty meal you know is good for your mental and physical well-being.Ingredients

1 lb. skinless salmon fillet
1 tsp cumin
Pinch of salt and pepper
2 tbsp olive oil
2 cups thinly sliced cabbage
1 avocado, chopped in cubes
3 tablespoons lime juice
8 corn tortillas, warmed
Cilantro, for garnish

Directions

Season the salmon with the cumin and salt and black pepper to taste. Cook in 1 tablespoon of oil in a large skillet over medium-high heat until opaque throughout, 4 to 6 minutes per side; flake.

Meanwhile, toss the cabbage and avocado with lime juice, the remaining oil, and salt to taste. Serve the salmon in tortillas with the slaw and cilantro. Serves 4.
